apple pancakes for 2
1 large granny smith apples (peel and slice thin.) -- Melt 1 Tbs of butter in skillet --- add the apples -- when they release their liquid add 1/2 Tbs of maple syrup. Keep cooking until liquid is gone and the apples start to caramelize.
batter - Whisk together 1 cups of flour, 2 tsps baking powder, 1/2 tsp salt, and 1/2 Tbs of sugar.
IN ANOTHER BOWL: whisk together until frothy 1 egg, a little over 1/2 tsps vanilla extract, and 3/4 cups plus 2 Tbs whole milk.
Add the flour mixture to egg mixture and whisk until flour disappears. Blend in 2 Tbs melted butter and cooked apples.
