English Muffin Loaf
5 3/4....... cup flour
2... pkg yeast
1... tablespoon sugar
2... teaspoon salt
1/4 . teaspoon baking soda
2 ... cups milk
cornmeal
Measure flour by spooning lightly into cup.
Combine 3 cups flour, yeast, sugar, salt, soda.
Heat milk and water to 120 F-130 F - Add to dry mix.
Beat well. Stir in more flour to make a very stiff batter.
Grease and sprinkle with cornmeal 2 - 8 1/2 x 4 1/2 x 2 1/2 loaf pans
Place dough into pans, and sprinkle tops with cornmeal.
Cover, let rise in warm place for 45 min.
Bake @ 400 F fir 25 min.
Remove from pan immediately and cool.
To serve, slice and toast.
I slice and freeze the bread--- toast slices I need and putting the rest back in the freezer.
